    Popcakes

Fluffy from the oven, rising high above the pan, these delicious breakfast treats are simple, tasty, and a delight for company. Imagine one great big popover coming warm out of your oven. Top it with strawberries, powdered sugar or whip cream. We squeeze a little lemon juice on it before smothering it in scrumptious toppings.
While the recipe is not original with me, I have passed it on to all of our guests.

Heat the oven to 425 degrees. Use a stoneware round 8" cake pan, or an 8" cast iron skillet, or even an 8" aluminum pan. Melt 2 TBLS of butter in the pan. Pull the pan out before the butter burns.
Then simply mix 4 eggs, 1 Cup of flour, 1 Cup of milk, and 1 tsp. of salt all together with a mixer until blended. Pour into the bake and bake for 20 to 25 minutes until it is golden brown and airy.
Top with your favorite fruit, powdered sugar, or whipcream.
    ENJOY!
